Television airwaves have been inundated over the past year with a new generation of cookware from three main brands: Copper Chef, Red Copper, and Gotham Steel. Today I’m taking a look at Gotham Steel Baking Sheet, which features the product’s ceramic/titanium nonstick surface.

Because it’s just a baking sheet, there is no learning curve to using Gotham Steel Baking Sheet. You can use it as you would any baking sheet, for cookies, pizza, steaks, bacon, etc. When you first use the pan, you’ll find food slides right off, just as advertised. What happens over time, however, varies among consumers.

If you’ve had any experience with other Gotham Steel products, you probably already know about how well this item will perform. The nonstick surface will perform surprisngly well at first. How you use it, clean it, and store it will then play a factor in how well it holds up over time.

The first thing I’ll say is that the commercial is very misleading when it states you can cut, slice, mix, etc. right in the pan. You can’t. The surface will scratch if you do this, and the nonstick surface will be compromised. In fact, I’ve found that these surfaces will continue to perform well only if you baby them. Some consumers may think it’s too much effort to baby a pan, but here’s how I get these types of surfaces to last:

Never use metal utensils in Gotham Steel Baking Sheet, and use the lowest heat you possibly can. Very high heat will degrade the surface. Let it cool a bit before cleaning, as placing it under water while very hot can also degrade the surface. When washing, use warm water to rinse it off, then apply some dish soap, and wipe out with a soft rag or paper towel. Then rinse again with water and wipe dry with a cloth. I don’t use it in the dishwasher, because that can also affect the surface. Finally, don’t stack other pans on top of it, or the surface can be scratched.

I actually quite like the new generation of nonstick cookware like Gotham Steel Baking Sheet, but it has taken me some time to learn how to properly care for these products. Some readers have said they’d rather just stick with cast iron, and I can’t blame them. But, because I am in the business of reviewing As Seen on TV products, I’ve started to amass quite a collection of cookware, and now that I go out of my way to care for them, I like them.

There was a Gotham Steel Cookie Tray a while back, which I didn’t see. I don’t know if these are the same things, but re-branded, or if they are completely different. Gotham Steel Baking Sheet is still pretty new, so you probably won’t see this in stores for a while.

If you take steps to care for your Gotham steel Baking Sheet, you’ll probably like it very much.

Alternatives

As noted above, there is already a Gotham Steel Cookie Sheet which looks about the same as this product, and can be bought via Amazon Prime. Farberware has a very popular nonstick cookie sheet for about $12, with high ratings.

I would give them a 0 star,, but i will give them a 1 star. I should have returned them right away and i didn’t. first off the very first batch of cookies left marks where every cookie was and i was never able to get the spots off. I have the three different sizes, my food sticks to the larger size, i made fish, the first side is fine, as soon as i flip the fish over the second side sticks.

My wife loves her Gotham frying pans. As above, you have to baby them. The cookie lady below likely used too high a temperature. Did she preheat the oven? Also do not use spray oil like PAM. Pour on oil is OK. We have similar technology cookie sheets that have lasted 8+ years. [ Teflon PTFE is terrible We are eating particles of it! ] This is a ceramic titanium coating.
